Rachel Khanna’s Mind Body Cooking

The mind body connection comes together through cooking in Rachel Khanna’s Live, Eat, Cook, Healthy. The author, a busy mom of four kids, was also running a successful organic catering business. Though delivering nourishing, healthy meals to clients, the author found herself undernourished, subsisting mainly on high sugar energy bars throughout the day.

Khanna was plagued by symptoms of stress–anxiety, night sweats, mood swings–but thought this a normal outcome of being a busy working mother. A car accident, the result of fatigue and distraction, was a wake up call that life was out of balance. It was through the nourishing power of food that Khanna began to heal her body and her mind.

Khanna went on to complete training in food therapy from the Natural Gourmet Institute and became a certified health counselor through the Institute of Integrative Nutrition. Learning about herbs and eastern healing methods, led her to explore Aryuveda, a Hindu philosophy of medicine that uses the inherent principles of nature to help maintain health. The beginning chapter of Live, Eat, Cook Healthy expands on these ideas, and by extension how they relate to food choices.

The book is also grounded in practical lessons on food, offering tips on healthy living through better eating. Khanna encourages eating lower on the food chain but also gives helpful advice on how to choose meats and fish, weaning away from food additives, too much dairy and sugar. The advice is never high handed. Khanna’s isn’t an all or nothing approach.

A chart of top 25 healing foods, another with healing herbs and spices, provides a useful guide, along with a brand source list to supplement her recommendations to eat local and seasonal whenever possible.

Most importantly, Live, Eat, Cook, Healthy is also a cookbook, and a solid one at that. The recipes include chapters on breakfast, appetizers and soups, entrees with and without meat, many influenced by Khanna’s time spent living in the far east, as well as salads, and desserts. This isn’t about deprivation by any stretch!

Ingredient lists aren’t overly long and the procedures, clear and concise. Many earthy photos throughout highlight the beauty and simplicity of the dishes. A majority of recipes can be cooked on any given weeknight, with a smaller balance that are more involved, such as a Maple Spiced Barbecue Chicken or an Indian Biryani, when time and experimentation in the kitchen is desired.

Bison and Dark Beer Chili

A Bison and Dark Beer Chili was rich and satisfying, buffalo being a leaner alternative to beef that isn’t typically factory-farmed. The addition of adzuki beans, is a preference of the author’s, easier to digest than other types of legumes. Chipotle in adobo tossed into the stew lent nice smokiness. The recipe made enough for dinner and then some, a welcome addition to the freezer for reheating down the road.

Indian Cabbage Salad was bright and fresh and very simple to prepare. The addition of toasted sesame oil and the heat of fresh chile a good riff on cole slaw.

Carrot-Ginger Soup

Carrot-Ginger Soup was comforting, the texture velvety without a lick of dairy. The addition of Granny Smith apple and a hit of fresh lemon juice at the end lent bright notes to the soup, taking the carrot away from a cloying and one note direction. Suggestions also included good alternatives–sweet potato or squash–in place of carrot.

Banana-Walnut Muffins (minus the walnuts, a recipe option)

Intrigued by a millet flour based muffin that was also gluten free, led me to try the Banana-Walnut Muffins. While the muffins baked up light, full of banana flavor that wasn’t overly sweet, the yield was double the dozen stated, and the baking time a third of the full hour as indicated. This recipe, however, was a slight hiccup in the group I tried.

Live, Eat, Cook, Healthy is a wonderful addition to the cookbook library of anyone in search of better balance through diet, by incorporating more whole foods, grains, and organic into their pantries, or to gain an understanding of alternative eastern practices as it relates through food.

More practically, this is the perfect cookbook to reach for when in search a dish for the family table that is accessible but a little bit different, completely healthy, and wholly satisfying.

Official Contest Rules


 1.        Eligibility

Live, Eat, Cook, Healthy Cookbook Giveaway (the Contest) is open to legal residents of the fifty (50) United States and the District of Columbia who are at least eighteen (18) years old at the time of entry. Employees of Fairfield Green Food Guide LLC and other companies associated with the promotion of the Contest, and their respective parents, subsidiaries, affiliates and advertising and promotion agencies as well as the immediate family (spouse, parents, siblings, and children) and household members of each such employee are not eligible. The Contest is subject to federal, state, and local laws and regulations.

 2.        Sponsor

The Sweepstakes is sponsored by Fairfield Green Food Guide LLC, Fairfield, Connecticut. This promotion is in no way sponsored, endorsed or administered by, or associated with, Facebook. Information provided by entrants is being given to the Fairfield Green Food Guide LLC and not Facebook and will only be used in connection with this promotion.

 3.        Agreement to Official Rules

Participation in the Sweepstakes constitutes entrants full and unconditional agreement to and acceptance of these Official Rules and the decisions of the Sponsor, which are final and binding. Winning a prize is contingent upon being compliant with these Official Rules and fulfilling all other requirements set forth herein.

 4.        Contest Period

The Contest begins on September 23, 2013 at 9 am EST and ends on September 25, 2013 at 9 am EST (the Contest Period). Entries that are submitted before or after the Contest Period will be disqualified. Submissions will be accepted for the duration of the Contest exclusively on our Facebook page.

 5.        How to Enter

This method of entry will be available by visiting our Facebook page (https://www.facebook.com/FairfieldGreenFoodGuide) and following the directions provided there.

Limit one (1) entry per person, per email address, and per household for the duration of the Sweepstakes Period, regardless of method of entry. Entries received from any person, e-mail address, or household in excess of the stated limitation will be void. All entries become the property of Sponsor and will not be acknowledged or returned.

 6.        Prize Drawing

On or about 9 am on September 25, 2013, the Sponsor will select potential winners in a random drawing from among all eligible entries received in the following fashion: We will pick 3 winners from “likes” and 2 winners from “comments” made on our Facebook cookbook giveaway post. The odds of being selected depend on the number of entries received. The Sponsor will attempt to notify the potential winners by announcing winners on the company Facebook page. If the potential winner cannot be contacted within five (5) days after the date of the first attempt to contact him/her, the Sponsor may select an alternate potential winner in his/her place at random from the remaining non-winning, eligible entries.

 7.        Winner Notification

The names of all 5 winners will be announced on our Facebook Page at the end of the contest. To win the prize, entrants come back to our Page to see who has won the contest and follow the prize claim instructions.

8. How to Claim a Prize

Winners must message our Facebook Page within 24 hours of winners being announced with the following information to claim their prize: Legal name, shipping address, email address, phone number and the following statement: “I am 18 years or older and a legal resident of the USA.”

The potential winners will be notified by email, mail or phone after completing the above. Each potential Prize winner (parent/legal guardian if a minor in his/her state of residence) will be required to complete, electronically sign and submit a Declaration of Compliance within five (5) days of the date notice or attempted notice is sent, in order to claim his/her prize. If a potential winner cannot be contacted, or fails to submit the Declaration of Compliance within the required time period (if applicable), or prize is returned as undeliverable, potential winner forfeits prize. If the potential winner is at least 18 but still considered a minor in his/her jurisdiction of residence, Sponsor reserves the right to award the prize in the name of his/her parent or legal guardian, who will be required to sign the Declaration of Compliance on the potential winners behalf and fulfill any other requirements imposed on winner set forth herein. Potential winners must continue to comply with all terms and conditions of these Official Rules, and winning is contingent upon fulfilling all requirements. In the event that a potential winner is disqualified for any reason, Sponsor will award the applicable prize to an alternate winner by random drawing from among all remaining eligible entries. Only three (3) alternate drawings will be held, after which the prize will remain un-awarded. Prizes will be fulfilled approximately 8-10 weeks after the conclusion of the Sweepstakes.

 8.        Prizes

Five (5) winners will each receive one (1) copy of the Live, Eat, Cook, Healthy cookbook, a $24.95 retail value. Winners agree to share any contact information provided during the prize claim process with Live, Eat, Cook, Healthy cookbook author Rachel Khanna to facilitate delivery of the prize.

9.         General Conditions

In the event that the operation, security, or administration of the Contest is impaired in any way for any reason, including, but not limited to fraud, virus, bug, worm, unauthorized human intervention or other technical problem, or in the event the Contest is unable to run as planned for any other reason, as determined by Sponsor in its sole discretion, the Sponsor may, in its sole discretion, either (a) suspend the Contest to address the impairment and then resume the Sweepstakes in a manner that best conforms to the spirit of these Official Rules or (b) terminate the Sweepstakes and, in the event of termination, award the prize at random from among the eligible, non-suspect entries received up to the time of the impairment. The Sponsor reserves the right in its sole discretion to disqualify any individual it finds to be tampering with the entry process or the operation of the Contest or to be acting in violation of these Official Rules or in an unsportsmanlike or disruptive manner. Any attempt by any person to damage the website or undermine the legitimate operation of the Contest may be a violation of criminal and civil law, and, should such an attempt be made, the Sponsor reserves the right to seek damages (including attorneys fees) and any other remedies from any such person to the fullest extent permitted by law. Failure by the Sponsor to enforce any provision of these Official Rules shall not constitute a waiver of that provision.

 10.      Release and Limitations of Liability

By participating in the Contest, entrants agree to release and hold harmless the Sponsor, and each of their respective parents, subsidiaries, affiliates, advertising and promotion agencies, other companies associated with the Sweepstakes, and each of their respective officers, directors, employees, shareholders, representatives, and agents (the Released Parties) from and against any claim or cause of action arising out of participation in the Contest or receipt or use of the prize (including any travel or activity related thereto), including, but not limited to: (a) any technical errors associated with the Contest, including lost, interrupted or unavailable Internet Service Provider (ISP), network, server, wireless service provider, or other connections, availability or accessibility or miscommunications or failed computer, satellite, telephone, cellular tower or cable transmissions, lines, or technical failure or jumbled, scrambled, delayed, or misdirected transmissions or computer hardware or software malfunctions, failures or difficulties; (b) unauthorized human intervention in the Contest; (c) mechanical, network, electronic, computer, human, printing or typographical errors; (d)application downloads, (e) any other errors or problems in connection with the Contest, including, without limitation, errors that may occur in the administration of the Contest, the announcement of the winner, the cancellation or postponement of the event and/or the flyover, if applicable, the incorrect downloading of the application the processing of entries application downloadsor in any Contest-related materials; or (f) injury, death, losses or damages of any kind, to persons or property which may be caused, directly or indirectly, in whole or in part, from entrants participation in the Sweepstakes or acceptance, receipt or misuse of the prize (including any travel or activity related thereto). Entrant further agrees that in any cause of action, the Released Parties liability will be limited to the cost of entering and participating in the Contest, and in no event shall the entrant be entitled to receive attorneys fees. Released Parties are also not responsible for any incorrect or inaccurate information, whether caused by site users, tampering, hacking, or by any equipment or programming associated with or utilized in the Contest. Entrant waives the right to claim any damages whatsoever, including, but not limited to, punitive, consequential, direct, or indirect damages.

By entering and participating, entrant agrees to hold harmless, defend and indemnify Facebook from and against any and all claims, demands, liability, damages or causes of action (however named or described), losses, costs or expenses, with respect to or arising out of or related to (i) entrant’s participation in the Sweepstake, or (ii) entrant’s participation in any Prize related activities, acceptance of a Prize and/or use or misuse of a Prize (including, without limitation, any property loss, damage, personal injury or death caused to any person(s).

 11.      Disputes

Except where prohibited, each entrant agrees that any and all disputes, claims and causes of action arising out of, or connected with, the Sweepstakes or any prize awarded shall be resolved individually, without resort to any form of class action, and exclusively by the appropriate court located in Connecticut. All issues and questions concerning the construction, validity, interpretation and enforceability of these Official Rules, entrants rights and obligations, or the rights and obligations of the Sponsor in connection with the Sweepstakes, shall be governed by, and construed in accordance with, the laws of Connecticut, without giving effect to any choice of law or conflict of law rules, which would cause the application of the laws of any jurisdiction other than Connecticut.

 12.      Privacy

Information collected from entrants is subject to sponsors privacy policy.

    • I understand your critique. What works for some may not work for all. Khanna is mainly espousing better living through better eating, regardless of whether or not you embrace alternative philosophies or practices. If you’ve satisfy a sweets craving by eating a chocolate bar vs. an apple how do you feel afterwards? What we eat truly effects our mood, energy levels, and by extension our health.
