Olivette welcomes Mauro Amelio and Barbara Ricca from the National Organization of Olive Oil Tasters (ONAOO) in Imperia, Italy to lead us through an evening of Olive Oil Tasting Education. This intensive 2-hour tasting workshop is a unique and rare opportunity to learn from these experts. Mauro and Barbara will instruct participants in the two most important skills needed to properly assess olive oil: taste training and sensory development.

Participants will taste 10-12 oils over the course of the evening and learn about:

  • the olive oil production process from tree to table
  • olive oil sensory analysis and grading methodology
  • positive attributes and common defects
  • labeling regulations and marketing issues

About ONAOO:

The National Organization of Olive Oil Tasters was founded in Imperia, Italy in 1983 as an initiative of the local Chamber of Commerce and a group of long-time tasters who possessed the commitment to defend, enhance and safeguard the important technical and cultural heritage represented by the art of tasting olive oil. ONAOO, the oldest olive oil tasting school in the world, has developed a training methodology over the years that deals with every phase of the olive oil production process. ONAOO courses offered in Italy are developed in cooperation with the scientific and university arenas and enhanced with cultural exchanges and annual trips to Spain, Greece, Morocco, Portugal and California. ONAOO has always represents an impartial position rooted in scientific rigor and a forum for shared experiences. Debate and defense of the quality of olive oils keep theoretical and practical knowledge alive and tangibly usable by all.

About ONAOO Leaders Mauro Amelio and Barbara Ricca:

A chemist by trade, Mauro Amelio has collaborated with ONAOO since 1993 as a teacher, taster and scientific adviser. He received his panel leader status from the International Olive Council (IOC) in 1997.

Barbara Ricca has been with ONAOO since 1985 and is charged with the organization and instruction of all tasting and educational classes put on by ONAOO.
