Please join me and Chef Silvia Baldini of the innovative culinary group Strawberry & Sage for an evening of cooking and education. In this hour-and-a-half event Chef Silvia will teach you to transform fresh, seasonal vegetables into elegant and delicious soups, tarts and crudite fit for home entertaining. Yes, you can do this yourself with the chef tips and tricks she’ll be demonstrating and the resources I’ll be sharing for finding these local-in-season ingredients at farms, farmers’ markets and for the very busy, online farm-to-door services.
Our community partners – Olivette, Wave Hill Breads, Farah’s Farm, and Walter Stewart’s Market – are generously supplying extra virgin olive oil, artisan bread, chicken and duck eggs, and fresh fruit and cheese, respectively, for Chef Silvia’s demonstration. We are proud to be working with such fine ingredients and products!
Each guest will take home recipes from Chef Silvia and an insider’s guide to finding the freshest, farm-raised food and other organic ingredients from me. We can’t wait to see you!
The cooking demonstration covers:
• Vegetable crudite – focus on knife skills and tips for elegant displays
• Vegetable tarts – learn one crust to use with five different fillings
• Vegetable and fruit soups – learn one base to create ten delicious soups
Silvia Baldini always dreamed of being a chef, even during her successful career as an art director. After 17 years in advertising she realized her dream by returning to school, graduating from the Cornell and French Institute and ultimately receiving a Grand Cuisine Diploma from Le Cordon Bleu, London. After working as a chef at prestigious Michelin star restaurants throughout Europe, Silvia returned to the East Coast and established her creative food group, Strawberry and Sage. Silvia has been featured in Saveur, the James Beard Blog, and has appeared on national TV cooking shows. Among her many clients are Bank of America, Royal Scottish Society, and Vista Caballo as well as private individuals, celebrities, food photographers and cookbook authors. Strawberryandsage.com.
Analiese Paik is the founder and editor of the award-winning website fairfieldgreenfoodguide.com and the food editor of Natural Awakenings, Fairfield County. Following a successful career in marketing management, she attended the Institute of Culinary Education and studied wine at the International Wine Center. Analiese has served as a judge for the Connecticut Specialty Food Association’s Product Awards Competition for the last four years. Analiese was featured in Every Day with Rachel Ray magazine as a “foodie who makes a difference” in recognition of both her current work and many years as a PTA volunteer advocating better school food. She has been featured as a green food advocate and expert in Fairfield Magazine, Fairfield County Life, Stamford Advocate, Connecticut Cottages and Gardens, and Westport Magazine, among others.
