We’ll teach you how to host A Warming Winter Dinner Party step by step, including culinary instruction, ingredient education and sourcing, wine pairing and serving, cookware and tools, and kitchen setup.

During A Warming Winter Dinner Party you will learn to prepare restaurant-quality, make-ahead dishes featuring organic root vegetables from local farms, sustainably raised meats, ancient grains, and organic fruit.  Chef Silvia Baldini will share professional culinary tips as she demonstrate how to prepare each dish using cookware and tools from Cook and Craft and fresh herbs from Wheelock Maidique’s Chef’s EcoWall Garden.  Analiese Paik will inform guests about the importance of sourcing high-quality, sustainable ingredients and share local food resources including retailers, farms, and artisan food producers. The tasting menu you will enjoy is expertly paired with sustainable wines from Old Greenwich Fine Wines, and owner Robert Petz will discuss both the wines and the sustainable winegrowing and winery practices that contribute to their quality and flavor.

Each guest will receive Chef Silvia’s recipes to prepare at home, an ingredient sourcing guide from Analiese Paik, fresh herbs from Wheelock Maidique’s Chef’s EcoWall Garden, wine pairings and service tips from Old Greenwich Fine Wines, and cookware and tool advice from Cook and Craft.

Silvia Baldini always dreamed of being a chef, even during her successful career as an art director. After 17 years in advertising she realized her dream by returning to school, graduating from the Cornell and French Institute and ultimately receiving a Grand Cuisine Diploma from Le Cordon Bleu, London. After working as a chef at prestigious Michelin star restaurants throughout Europe, Silvia returned to the East Coast and established her creative food group, Strawberry and Sage. Silvia has been featured in Saveur, the James Beard Blog, and has appeared on national TV cooking shows. Analiese Paik is the founder and editor of the fairfieldgreenfoodguide.com, a 2015 Morris Media Group Green Awards Honorable Mention honoree and 2012 Slow Food Snail of Approval awardee. Following a successful career in marketing management, she attended the Institute of Culinary Education and studied wine at the International Wine Center. Analiese has served as a judge for the Connecticut Specialty Food Association’s Product Awards Competition for the last four years. She was featured in Every Day with Rachael Ray magazine as a “foodie who makes a difference” in recognition of both her current work and many years as a PTA volunteer advocating for better school food.
