chef phoebe cole-smithAn invitation from Dina Brewster, farmer and co-owner of The Hickories:

If there is anything I have learned over the years of doing this work, it is that we must celebrate every victory; inspiration and motivation are self-fulfilling.  And the people who inspire me the most these days are young farmers, emerging from every corner of our state. More and more come each year and the resumes on my desk stack up.  They are taking up the reins, taking up the plows, and serving their country by growing good, clean food.

A ten minute conversation with a young farmer is the antidote to any fears you may have that the future might be getting dimmer.  I watch them – sitting in their dusty jeans on my front porch, sharpening their harvest knives, plotting out their pasture plans – and I know everything is going to be okay.  So we are throwing them a party and you are invited to meet them and support their cause by buying a ticket and eating some of the best food they have grown this season cooked by one of The Hickories’ favorite farm-to-table chefs.

One of the things we love most about Phoebe Cole-Smith (pictured above) is that she is a chef who “walks the walk.”  That is, she divides her time between her farm (Dirt Road Farm) and her chef business (PICNIC.) The synthesis between the garden and the kitchen lends itself to her deeply creative menus – where deep knowledge about one enhances successes in the other.  Phoebe trained at the French Culinary Institute in Manhattan and then interned in the kitchen at Blue Hill at Stone Barns Center for Food and Agriculture.  She is a longtime supporter of The Connecticut Farmland Trust, a member of CT NOFA, Chefs Collaborative, the Backyard Beekeepers Association and is a past member of the Town of Weston CT Select Committee for Sustainability.

Phoebe is one of The Hickories’ most beloved farm-to-table chefs.  She has put together a selection of foods that will exhault spring and bring us into early summer.

Buy your tickets today to support the New CT Farmer Alliance and invite a friend to spend a magical  evening at the farm enjoying Phoebe’s culinary genius in the company of those who love local food as much as you do. Click here to purchase a ticket online.
