We should do a side-by-side test one day and see if that salt rule is a myth. I recall trying it many years ago and it took forever for the beans to cook. But, it could have been an old batch of beans. A friend of mine told me this weekend that his Mexican wife doesn’t soak the beans and cooks them in 45 minutes in a pressure cooker!

Bring on the beans. They are a staple in our household. Jacques Pepin says they actually don’t have to be soaked, and our experients prove this to be true — but if you don’t soak them, they’ll need to simmer much longer. So, the environmentally friendly method is to soak.

Your recipe is very thorough. I deviate from your Golden Rules in one area only. I salt at the beginning of the cooking. Some say this makes the skins of the beans tough, but I find that it gives the beans more flavor.

I found your web site via a regular email that I receive from Fairfield Green Food Guide.

My daughter moved from CT to Portland, OR a year ago because she believes so strongly in sustainablility and organic farming. When she was here for the holiday she mentioned finding Chamomile tea very relaxing, so when I found your website (and the “free shipping during January was the clincher!) I decided it was a perfect impromptu gift to send her.

I really miss her and have hinted strongly that she move back East….Perhaps the availability of your tea will change her mind!

Tea is such a civilized way to confront the insanity of the day; from the calming ritual of preparing it, to the sensory experience of sipping and savoring it. My HS daughter and I have a standing date for a cup of herbal tea while we watch Glee on Tuesday Nights. And I’m delighted she’s already been indoctrinated into the serenity of the tea world as a mere teen!
