Chef Joe Wolfson of Terrain Garden Cafe, the eatery inside the the newly opened Terrain store in Westport, arrived in town two weeks ago from Alabama. No wonder there are grits on the menu. But they're Alabama grits, sourced from a friend who grows them back home.

Chef Wolfson's dedication to local sourcing will become evident over the next few weeks as he starts receiving  produce and other farm-fresh foods from Red Bee Apiary in Weston, The Hickories in Ridgefield, Millstone Farm in Wilton, Holbrook Farm in Bethel and Warrup's Farm in Redding. The cheeseboard already screams local with a selection of Connecticut and Vermont cheeses.]]></description>

Being a food writer and regular farmers’ market shopper, I’ve been pretty comfortable in that assertion for years. In my family, we buy a lot of organic foods, especially meats, produce and dairy. Our kids have been eating a variety of foods from the beginning: salmon, spinach, hummus, feta cheese and balsamic vinegar are all things they will ask for by name. Deep fried chicken parts never entered into our family’s food equation.

This belief was recently demonstrated when I had the pleasure of meeting Johan Reyneke, a biodynamic winemaker from South Africa, at the New York Wine Expo. In fact, he claimed to be the only biodynamic winemaker in South Africa. I am an advocate of organic, biodynamic and sustainable winemaking and am thrilled when I find people committed to producing products farmed with these methods. What pleased me even more were the wines themselves. Fresh, clean, complex without being aggressive – they were the definition of terroir driven wines.]]></description>

		<description><![CDATA[Most consumers are unaware of the fact that over 70% of processed foods sold in grocery stores contain at least one GM ingredient because they are not labeled. Connecticut, California, Vermont and now Minnesota are working to pass state laws that would mandate the labeling of GM foods because the FDA so far has refused to change their policies. Vermont and Connecticut's labeling bills have been voted out of Committee, and may or may not be passed by the end of the current legislative session (May 9 in CT). California's ballot initiative gathered more than 850,000 signatures and they believe they will be on the ballot this November. ]]></description>

Every bite gives you a burst of lemony flavor followed by a full-mouth feel from the olive oil.  The key is to use a high quality lemon-infused extra virgin olive oil.  Olivette, in Darien, is a fantastic resource for incredibly fresh and pure olive oils.  Their lemon-infused variety is what I used here. You could also make this recipe with their blood orange or lime infused oils.]]></description>
